Bah! Brad didn’t get home from the store till like 10:30PM last night? Then we didn’t sit down to eat till later than that so we decided to wait on Biggest Loser but TONIGHT FOR SURE!

This morning I finally did a workout on the Wii Active for the first time in maybe 2 weeks? After a snack and shower I sat down and got the rest of my online work accomplished, YIPPPPPPPEE! :) I let Katie stay up 30 minutes more than usual before I put her down for nap nap! THEN…

It was TO THE KITCHEN! I wanted to have plenty of healthy goodies to make snacks with SO It started last night when I cooked some brown rice to have on hand. I also put some pinto beans into a pot to soak overnight. This is what I did this afternoon:

First up I made pinto bean and OAT burgers! I looooove the oats baked because their crunchy! I found this idea online and Brad and I both like it a lot better than using whole wheat flour. I baked 7 of these and ate one with some block moz cheese this afternoon.

I bought an extra tube of ground turkey so I browned the meat and put it in the fridge to put with snacks and sometimes I’ll use it in my lunch instead of the usual chopped up chicken breast to have some variety. I usually make this into patties but figured I’d do it this way.

I really love ANY kind of squash and when I started losing weight, we started buying zucchini, chopping it up into slices and baking those as a side item so here’s a little side item!

AND THE WINNER…….. BAKED BUTTERNUT SQUASH. OMGOMGOMG. I had to try it when it came out the oven and I can honestly say I LOVE IT. I put a little butter on each chunk then put it in the oven for almost an hour and ooooooh it is delish! I put a little chunk of it on our dinner plates for when we eat tonight!

Not pictured was the CABBAGE! Since a head is only like 67 cents I decided to buy one to boil. I remember growing up and my Mom boiling cabbage so I wanted to do that! Now I have plenty of boiled cabbage to put into different snacks and such.

Healthy food = happiness to me!!!!! I am so tired between the exercise this morning and then working in the kitchen from 3pm-7pm between all that baking/cooking then I also cooked our dinner so I am ready to relax but gotta bathe and put Katie to bed in a bit THEN It will be time to sit back and watch Biggest Loser! I also have had a tiny headache off and on almost all day- which is annoying.
