I’ve had quite a busy Monday! I slept quite well last night TOO! I woke up once because I got too hot and took off my socks then went back to sleep. Usual sleep-in Monday but got up and fixed Katie’s breakfast then mine as well. We all ate then hung out and eventually got ready to head out for our weekly grocery shopping.

It’s taken a lot of tweaking and planning but I can now honestly say YOU CAN EAT HEALTHY ON A BUDGET. Of course with being vegan now It also helps since we don’t buy eggs or meat anymore. We now spend about $100 a week on groceries so we’ve come a long way!!! Also, this $100 we spend now buys us a LOT of healthy, good, fresh food and that is allllllllllllllll that matters to me.

On the way home, we shared an AMP energy drink and both ate a nutritional bar. After we got back, I fed Katie lunch and munched on a small apple while I started going through and putting away the groceries. Brad put Katie down for her nap after she was done and I spent the next 2 hours or so chopping, cooking, baking and sorting all our foooooood! It takes a bit to do it all but It’s worth it to have all of our food ready-to-eat, reachable or atleast organized so that the stuff that does have to be cooked is easy. Nowadays, I either eat my veggies raw or roast them in the oven. EASY! 20 minutes in the oven and it is good to go. I finally sat down and relaxed for a bit. Downloaded my online work and my usual Internet sites while listening to some music. Katie got up later on and after she ate her dinner, she was a really good girl and played with her toys until bed time. We just finished our delicious pile of veggies, brown rice and lentils for dinner and now it’s time to study our scriptures and hopefully watch the last SHREK movie!!!!!!

I’ve felt alright today but still get lightheaded every now and then. I know it’s gonna take a while to straighten my body out but I’m just glad little good signs are happening in that process. That’s all I need.
